Quinoa Salad


As we all know quinoa is the latest healthy food trend! Here is a quick and easy recipe to making a delicious quinoa salad. 

Ingredients:
  • 1 and a half-cup of white quinoa.
  • Half a cup of loose corn.
  •  Half a cup of chopped avocado.
  • 1 cup of frozen edamame beans.
  • Half a cup of feta cheese.
  • 3 table spoons of dried cranberries.
  • Half a lemon.
  • Two teaspoons of honey.


Directions:
1.     Bring the water to a boiling point and place the quinoa in for 20 minutes.
2.     Boil your frozen edamame beans and corn for 5-10 minutes.
3.     Place the edamame and quinoa in a bowl.
4.     Mix in the feta cheese and dried cranberries, and avocado.
5.     Mix the lemon juice extracted from the lemon with two teaspoons of honey as a dressing.
6.     Add the dressing to your quinoa salad and mix.


Serving: 2 People max.
